This delicious wine is made from 100% Pinot Grigio grapes, 50% whole cluster pressed (skin contact for 8+ hours) and 100% tank fermented then aged sur lie for six months, no malolactic fermentation and no oak aging.  The grapes are harvested at multiple dates with increasing brix and decreasing acid levels to maximize the varietal character and to contribute the best flavor profiles of the varietal from our different vineyard sites.  We begin harvesting at about 21 brix with an acidity of 0.70g/L.

Delicious, crisp Pinot Grigio, made with 100% Pinot Grigio grapes.  Brilliant, pale straw color.  The nose shows subtle lemon and tangerine, ripe yellow peach and honeysuckle.  The wines is lively on the palate with bright acidity.  Light to medium body with flavors of Meyer lemon and hints of Honeydew melon.  It has  a clean, full mouth feel and a fresh pineapple and pear finish.  Our Pinot Grigio is a perfect accompaniment to seafood, pasta with a light sauce and roasted chicken dishes.

Rob's philosophy is to use Italian varietals, combined with California climate and winemaking techniques to enhance the true characteristics of the Pinot Grigio varietal.  We are looking to enhance the core to support the finish.  We want some weight in the mid-palate.  PAVI WINES continues to be a leader of Italian varietals produced in California.
